This month's recipe is championing our local honey, a favourite product of our customers. These scrummy Honey & Oat Biscuits are easy to make and are the perfect accompaniment to an afternoon cup of tea on a warm Spring day.

The biscuits tend to expand significantly during baking, so be sure to space the dough into small portions beforehand.
I opted for salted butter, which imparted a sweet and salty taste to the biscuits. However, if you prefer a different flavour, using unsalted butter with a pinch of salt is a great alternative.
This recipe can be made gluten-free easily by replacing the oats and flour with your preferred gluten-free alternatives.
